The Effect of pH on Enzymes

pH affects enzymes. If the pH gets too high or too low then the bonds holding the enzyme together break. This denatures the enzyme which means the active site is changed. This means that the specific substrate cannot be broken down by the enzyme.

NB - all enzymes have an optimum pH. This is usually neutral at 7 but can be different:
e.g Pepsin. This is an enzyme that works in your stomach and it's optimum pH is around 2 so very acidic.
